Head Distiller, Caleb Kilburn, created a special batch of bourbon using the highest quality grains to produce a spirit that upholds the Peerless legacy. Once the bourbon has been distilled and proofed for barreling, we will fill Bottle #1, which represents “new make” unaged bourbon. This is a clear spirit since the alcohol has never touched an oak barrel, and it illustrates the first step of the journey to a carefully crafted and aged product.
The remaining bourbon is placed in six barrels and resides on a single end rick, where the maturation process will begin. After six months, a barrel will be taken down to create Bottle #2. This bourbon will be poured straight from the barrel with only minimal coarse screening to remove char. It will remain in its pristine and unaltered condition, perfectly capturing that moment in its aging.
