A deep, musty, earthy character shines in the nose. Dark caramelized molasses and thick cherry syrup add balance while preserving this barrel’s earthy demeanor. Herbaceous qualities come through also. The taste hints sweet, but rolls into a massive oak and rye spice wave. As the wave declines, dots of fruit join, but are overpowered by a savory, dry oak. The second sip adds an oak infused fruit syrup quality before returning to the same wave, but with an even more prominent oak. The long finish carries on to feature dots of dark chocolate, sweet oak, and dry oak. Excellent showcase for the Oak and Pepper portion of the flavor wheel!
