2 oz. Peerless Rye
1 tsp. Demerara Syrup
3 Dashes Peychaud’s Bitters
Absinthe for washing the glass
Lemon Peel for garnish
Chill a small rocks glass in the freezer or fill with ice and let it chill while you build the cocktail. In a mixing glass, add all ingredients and stir with ice.
Dump the ice out of your chilled glass and spritz or lightly wash the inside of the glass with absinthe.
Strain into absinthe-rinsed glass and garnish with lemon peel after expressing the oils over the glass.
