Ingredients
2 oz Peerless® Rye or Peerless® Rye Absinthe Finished
½ oz simple syrup
2-3 Peychaud’s bitters
¼ teaspoon Absinthe for rinse (if not using Peerless® Rye Absinthe Finished)
Lemon peel to garnish
Method
Add the first three ingredients into a mixing glass with ice and stir until cold.
Rinse the inside of a chilled rocks glass with absinthe until the inside is coated (if not using Peerless® Rye Absinthe Finished).
Strain into the glass neat. Squeeze lemon peel to extract the oils over the cocktail and rim the glass.
Add lemon peel for garnish.
